The Utsukushima Yume F701 yeast described as giving banana aroma, plus the lively nama style, points to a fruity aroma. Sake meter +4 with low acidity of 1.2 suggests a dry, light profile with some texture from origarami.

About

Light in flavor, yet not simply light: the aim is to give it accents and a sense of breadth. The yeast used is Utsukushima Yume yeast F701, and we aim to finish it as a sake with a refreshing banana aroma. Pressing (shibori) is coming soon, and fermentation of the moromi (fermentation mash) is progressing well. We are looking forward to pressing and then blending.
