The daiginjo grade and koshu (aged) attribute, plus about two years of sub-zero aging described in the text, point to a fragrant, mature style with added body. SMV +3 and acidity 1.4 suggest a soft, gently sweet and rounded palate.

About

This Junmai Daiginjo is made with contract-grown Yamada Nishiki from a Special A district in Hyogo Prefecture. Two Junmai Daiginjo sakes, one polished to 20% and one polished to 35%, were aged for about two years at 0°C or below. Just before shipment, they were blended in a 1:1 ratio.
