About

The Japanese name for cosmos is akizakura, and we named this hiyaoroshi (sake released in autumn after resting through the summer) after the autumn flower. Each bottle is directly drawn genshu (undiluted sake), carefully pasteurized one bottle at a time, then bottle-aged and left to rest slowly through the summer. While keeping the gentle umami of soft-water brewing, we finished it crisp and dry, expressing the Fukucho style in a hiyaoroshi. Enjoy it slowly on long autumn evenings with seasonal ingredients.
