Junmai ginjo from 60% polished Yamada Nishiki, with a soft, floral aroma kept through a summer of bottle aging, points to moderately high aroma. Undiluted genshu bottle storage and the described mellow maturation suggest a rounded, medium-full body with moderate sweetness.

About

The Japanese name for cosmos is akizakura, and this hiyaoroshi (sake released in autumn after aging through the summer) is named after that autumn flower. Fukucho's hiyaoroshi is made from chokugumi (directly drawn) genshu (undiluted sake). Each bottle is pasteurized individually and then bottle-aged, resting slowly through a full summer. It keeps the soft, floral character Fukucho is known for, while the flavors settle into a more unified and mellow balance. One of Fukucho's long-selling products, it has been loved for more than 30 years. Rice polishing ratio: Koji rice 50%, kake rice 60% Specifications: chokugumi / genshu / bottle-pasteurized / bottle-aged
