About

Even for honjozo, Isojiman Premium-Sake Brewing puts the same labor and process into brewing as it does for ginjo. The sake rice is 100% top-grade (tokuto) Yamada Nishiki from Tojo (東条) in Hyogo, a Special A-grade rice producing area. Both the koji rice and the kake rice (kakemai, the rice added to the mash) are polished to 60% (rice polishing ratio). Slowly brewed at low temperature with great care, it has a gentle, fresh aroma and flavor.
