The 17% alcohol and unfiltered nama style add some weight, but the brewery's stated aim of a light, clean profile points to restrained aroma and a light body. The sweet-tart description suggests moderate sweetness.

About

Sold February through May as a spring limited release. Inspired by the mild warmth of spring air, this sake aims for a light, clean-tasting character. It is made with Gohyakumangoku sake rice grown in Kyoto, a rice variety well suited to the fresh, springlike impression the brewery intended. Like spring ingredients such as fukinotou (butterbur buds) and tara no me (Japanese angelica tree shoots), it leaves a subtle bitterness and astringency on the finish. That lingering finish invites another bite of food. No filtration is carried out (muroka, unfiltered). Depending on the timing of bottling, some rice components may remain in the bottle. As a namazake (unpasteurized sake), it conveys the lively energy of living yeast directly to the palate.
