About

This sake is brewed with Kyo no Koi, a newly developed Kyoto yeast. The rice is Iwai, a sake rice grown in Kyoto, making this an all-Kyoto junmai sake. Freed from convention, we brewed in the way best suited to this yeast. Four-stage brewing (yodan jikomi) and genshu (undiluted sake) give it a substantial body, with the firm umami and sweetness of the rice. Long, ultra-low-temperature fermentation produces a clear aroma and a refreshing crispness, and these elements harmonize well. The sake is not filtered at all (muroka), so depending on the timing of bottling, some rice components may remain in the bottle. As a namazake (unpasteurized sake), the lively energy of the living yeast comes straight through to the palate. ※This new junmai sake was co-developed with the Kyoto City Industrial Technology Research Institute.
