Omachi rice, 17% alcohol and the unfiltered nama style point to a full, umami-rich body, and the description stresses a clean finish. Aroma stays restrained and rice-led, with modest sweetness.

About

Sold from June to August as a summer limited release. This sake was created with the image of sipping something refreshing on a hot summer day. However, for a body that feels worn down by summer heat, refreshment alone is not enough. Umami must also be present, or the meal itself will not be enhanced. The sake rice Omachi gives a robust flavor that delights the palate, and we believe it leaves a clean finish. No filtration is performed at all. Depending on the timing of bottling, rice components may remain in the bottle. Namazake (unpasteurized sake) carries the lively energy of living yeast directly to the palate.
