About

Available mid-September through November. A limited autumn release. Autumn is the season of appetite, and this is Kagura in its "akiagari" (autumn maturation) form. At Matsui Shuzo, all Kagura sake is stored at Hyoon Chozo (ice-temperature storage). After passing through a summer, the sake gradually becomes rounder while keeping some of its fresh character. Several Kagura that have matured well during this period are blended together before shipping. This is for the coming winter, for a body with a growing appetite and a palate that has grown discerning. It is a Kagura with concentrated umami that pairs easily with a wide range of meals, from light dishes to rich ones.
