Banana, melon and white peach aromas, plus concentrated rice sweetness, umami and a full, rich body, place this in the aromatic, rich quadrant (juku). An SMV of +3.5 and 35% polishing suggest moderate sweetness, while the nama freshness keeps the profile balanced.

About

The name comes from the woodblock of "Hi Ira Kotobuki," a label used on namazake (unpasteurized sake) in the early Meiji era. Tasting notes Aromas of banana, melon and ripe white peach are accompanied by rice flour (joshinko) and wasanbon sugar, characteristic of namazake, along with the creamy dairy notes of fresh cream. Sliced fresh almond adds an accent, and the herbal fragrance of tarragon lends freshness. The natural sweetness of the rice and its concentrated umami are very striking. On the palate, a rich body spreads out as soon as the sake is taken in. The scale is generous, and the solid volume and the fresh character unique to namazake harmonize to keep a pleasing balance. An elegant, delicate sweetness lingers in a long finish. Recommended pairings Western: Roast Bresse chicken with champagne sauce Japanese: Tecchiri (blowfish hot pot) Chinese: Ise lobster with crab miso thick sauce
