The 40% polishing daiginjo with a described noble aroma points to high aromatic character. Low acidity (1.3) and SMV +3 give a soft, mildly dry profile with umami carried by the genshu style.

About

"Jufuku Mukyo" is read jufuku mukyo and means "there is no limit to the blessings one receives from heaven." Brewed with great care in winter (kanjikomi) using small-batch brewing (koshikomi), the sake was made from upper-clear pressing (uwazumi shibori) and bottled for storage under temperature-controlled cold storage, allowing its umami to develop slowly. This junmai daiginjo, which harmonizes a noble aroma with a dignified umami, is the brewery's finest sake, in the class of its exhibition sake (shuppinshu). We invite you to savor it.
