About

The ultimate daiginjo, bringing together the finest sake rice, the finest brewing water, and the finest brewing skill of Reijin. Made with Yamada Nishiki, widely regarded as the premier sake rice, grown in Hyogo Prefecture and polished to 39%, close to the limit of current polishing technology. The sake is brewed with underground water (fukuryusui) from the Kirigamine Highlands. Brewed with the Annual Japan Sake Awards in mind, this sake offers a truly refined flavor. It is a daiginjo with a very distinct, clearly defined profile. This is a limited-quantity product and may sell out. We kindly ask for your understanding.
