A sake-do of -4 and acidity of 1.8, together with the description's emphasis on 芳醇旨口, rice umami and sweetness, point to a rich, rice-led profile with restrained aroma and noticeable sweetness. At least six months of aging adds roundness.

About

Aiming to preserve the umami and sweetness of the rice and its aroma, we brewed with an emphasis on the true character of junmai sake. Pressed during the deep winter cold, the junmai sake is aged in the brewery for at least half a year, through spring and summer, before shipment. We ship it once the bitterness and astringency of the new sake have faded, its harshness has been smoothed away, and its mellowness and umami have increased. As a food sake, it pairs well with a very wide range of dishes. It is a richly flavored junmai sake that matches beautifully with the seasonal flavors of each time of year.
