About

Crafted with the utmost dedication by our brewers, this is an ultimate Junmai Daiginjo sake. The rice is Yamada Nishiki from Hyogo Prefecture, often regarded as the finest sake rice, polished to 39%, close to the limit of current polishing technology. For pressing, rather than using a press machine, the moromi (fermentation mash) is hung in cloth bags and allowed to drip naturally, a method known as fukuro-tsuri (bag hanging). The drops are collected one by one, producing a very soft, gentle taste. The sake has a harmonious balance of a floral aroma and the natural umami of the rice. Only a limited quantity can be pressed, and this is a treasure of Japanese sake once said to be kept from leaving the brewery.
