Junmai at 60% polishing with SMV +2, acidity 1.5 and a 16.5% genshu points to restrained aroma and a mid-dry profile. The description of gentle rice umami and a clean finish supports a light-to-moderate body with some richness from the undiluted sake.

About

Brewed carefully in harmony with the sake-making traditions passed down at our brewery, this sake has a gentle rice umami and a clean, smooth character. We hope that through this sake you have been able to feel “comfort” and “peace of mind.” ※“Yuragi” refers to the unpredictable changes and movements of things. The natural world is full of yuragi. The orbits of the sun, moon, and stars appear regular, but they are said to fluctuate slightly over time and are not constant. ※The gentle fluctuations in the murmur of a small stream and in the grain of wood give people a sense of “comfort” and “peace.” ※Sake brewing is also a world of yuragi. The rice harvest and the weather differ from year to year, and the activity of koji mold and yeast differs from batch to batch. Handmade work in particular contains a large element of yuragi, and I believe it requires traditional skill (waza) and sensitivity (kansei). We hope you will find “comfort” and “peace” in the soft, delicate flavor of this handmade sake.
