About

Flavor profile: Smooth and silky in character, with a very gentle mouthfeel. Recommended pairings: Pairs well with sashimi of blue-backed fish such as Setouchi aji (horse mackerel) and saba (mackerel), or with grilled fish. Locally in Ube, Yamaguchi Prefecture, 100% Yamada Nishiki sake rice is used, grown by our staff in rice fields within 5 km of the brewery. Ube's rice, grown in soil with more sand than the Yamada Nishiki from Hyogo Prefecture, is characterized by a light, silky flavor. The name "Domaine" refers to a local producer in the region. Release: Year-round
