Over ten years of aging (koshu) on a 35% polished daiginjo points to mature, complex aromas and a full body, placing it in juku. SMV +5 and a low acidity of 1.3 suggest a dry-leaning but soft profile with a gentle sweetness.

About

This sake is from Shata Shuzo, located in Hakusan City, Ishikawa Prefecture. Shata Shuzo is a brewery whose adviser master brewer (komon toji) is Naka Saburo, one of the Noto Shitenno (Four Heavenly Kings of Noto), a group of renowned master brewers from the Noto region. Made with 100% Yamada Nishiki grown in the Special A district, this daiginjo was brewed with the full skill and refinement of Tengumai. The tobin-dori (the finest portion, collected in small tobin vessels) was matured slowly within the brewery for over 10 years. Among these, those of especially superior quality are selected and named Yukanhaku. Yukanhaku means "here dwells a divine sake that brings forth joy," and it carries the dignity befitting the treasured daiginjo of Tengumai.
