About

After ten years of effort, Kochi Prefecture's first sake rice, Gin no Yume, was born in 1998 (Heisei 10). Gin no Yume is a variety whose mother plant is Yamada Nishiki and whose father is the short-statured Hinohikari (table rice). It inherits Yamada Nishiki's brewing suitability intact, and it has been improved to resist lodging and to be easier to grow in Kochi's climate. Gin no Yume Shikomi uses 100% Gin no Yume and is finished as a gentle sake with a bright, elegant aroma. It pairs well with food and is just right for the dinner table on a small Iwai (celebration) day.
