The restrained citrus ginjo aroma, fine texture and sharp, clean finish with faint sweetness point to moderate aroma, a light-to-medium body and low-to-mid sweetness. The 55% polishing and 15% alcohol support this lighter, aromatic profile.

About

One of the blessings unique to our brewery is its brewing water, which is well suited to sake making. Low-temperature fermentation using soft water proceeds slowly and gently, producing a sake with a fine, supple mouthfeel. While you can sense the fullness and softness of the rice, the finish is sharp. The sake is refined, with little off-flavor and a clean finish. The uwadachi-ka (initial aroma rising from the glass) is also well expressed, and the gentle sweetness and clean acidity characteristic of Bijofu remain intact.
