About

Made with Yamada Nishiki, the finest sake rice, grown in Hyogo Prefecture and polished to a rice polishing ratio of 30%, this junmai daiginjo is slowly brewed with Kumamoto yeast. After pressing, the sake is bottled directly without pasteurization (namazume) and aged at a low temperature of -1 °C. It is a wholehearted effort from the brewery. With an elegant aroma and the rounded fullness unique to genshu (undiluted sake), this is a premium limited release.
