The text describes an aged kimoto junmai koshu with golden color and dense umami, and the 15% alcohol supports a full, rich body. Aroma is restrained, so it sits in the juku quadrant with mature, savory character rather than fruity lift.

About

With a character so distinctive that it overshadows every other sake, this limited release was first introduced a few years ago as a single tank's worth. It sold out, but the calls for an encore did not stop, and it has now finally become a regular item in the lineup. The current bottling is from the 2014 vintage, an aged koshu (aged sake) made with Daishichi's proud junmai kimoto (traditional yeast-starter method) brewing. It has been carefully watched over and matured as a fine example of its kind. After many years, the golden drops have matured into full richness, packed with umami. Served warm (kan), it spreads gentle savoriness through the body and leaves a warm fire glowing at the core.
