About

Brewed from December to January, the period known as kanzukuri (cold-season brewing) and considered the most suitable time of year for making sake, Kubota Senju Ginjo Nama Genshu is a just-pressed nama genshu of Senju that can be enjoyed only in winter. Brewed at low temperatures, with saccharification and fermentation progressing slowly, it is finished so that its flavor stays soft even though it is a genshu with no water added and a high alcohol content. The sake offers the fresh mouthfeel of just-pressed sake, the rich flavor characteristic of genshu, and a powerful aroma. It retains Senju's inherent easy drinkability and clean finish. It pairs well with winter fare, whether light or rich dishes.
