About

Made with 100% Yume Sansui, a high-quality sake rice grown under contract in Okumikawa, Aichi Prefecture, this sake was created through handmade koji making and the brewery's own meticulous management of moromi (fermentation mash). With an alcohol content of 18% or higher, it is a Junmai Ginjo with a thick, viscous texture (toromi) and a pleasing aroma, unlike any other sake we have made. We invite you to savor our proudest creation to your heart's content. The word 'Waka' in this product name refers to the sake's youthful aroma and flavor, which it has when less than six months have passed since the new sake was pasteurized.
