About

The aim was to create a sake with a vivid, flowery aroma while also making it as rich as possible. Achieving both is extremely difficult, a dream of sorts. That dream was finally realized after years of research. Made with 100% Yume Sansui sake rice contract-grown in Okumikawa, this sake was born from hand-made koji production and the brewery's own detailed moromi (fermentation mash) management. Shun is mellow in flavor, aged for more than six months but less than one year after its initial pasteurization (hiire).
