Polished to 20% as a junmai daiginjo from Yamada Nishiki, this should show pronounced ginjo aroma. The 16% alcohol and light build place it in the aromatic, light kun quadrant with moderate sweetness and medium-light richness.

About

Since 2016 (Heisei 27 brewing year), Sharaku has taken on the challenge of ultra-high rice polishing, and this year we are again releasing "Sharaku Junmai Daiginjo Kiwami Ni-wari." This year, the sake uses Yamada Nishiki grown in Rokko, Hyogo Prefecture, from the Special A district. Yamada Nishiki is the highest-ranked variety among sake rice. The rice polishing ratio is 20%, the kiwami grade, and the rice has been polished to that level. Note: "Sharaku Junmai Daiginjo Kiwami Ni-wari" will be released in two batches, in mid-July and mid-December. Note: Information as of January 2024.
