About

Since the days of the first generation, our brewery's sake has been said to be at its best as "akiagari" (sake that has rested through one summer and is released in autumn). Our sake is brewed with mineral-rich hard water, so when it is young it can give a somewhat firm impression. As time passes and it matures, however, it becomes rounder and more richly flavored, much like the way new leather shoes or denim gradually settle in to fit the skin.
