Sake of Ishikawa

Ishikawa Prefecture benefits from soft to medium-soft water from the Hakusan water system and a cold climate. It has more than 40 sake breweries, mainly in the Noto and Kaga regions. It is also the birthplace of the Noto toji, and many breweries value traditional methods. Sake brewed by Noto toji is characterized by a rich, full-bodied taste with a sense of maturity. The "Kanazawa yeast," which gives ginjo sake a gorgeous aroma and refined quality, has been distributed for about 20 years as Kyokai No. 14 yeast.
