About
Yoshida Shuzoten in Hakusan, Ishikawa Prefecture, is a sake brewery founded in 1870 (Meiji 3). It stands almost in the center of the Tedori River alluvial fan, with a view of the sacred Mount Hakusan, and draws on subterranean water from the Tedori River for its brewing water. Its flagship brands are Tedorigawa and Yoshidagura U, and the brewery is known for its skill in yamahai brewing (a traditional method that builds the yeast starter without added lactic acid). The brewery is now led by Yasuyuki Yoshida, the seventh generation.
