About

Dam aging (600 bottles in storage) The inside of the dam's management facility receives no sunlight, and its temperature and humidity remain constant throughout the year, which makes it well suited to aging sake. This dry Tokubetsu Junmai Genshu (undiluted sake), made with 100% Miyama Nishiki rice from Nagano Prefecture, matures slowly inside the dam and is characterized by a calm, mellow, and deep flavor. It is recommended chilled or lukewarm (nurukan). Nagano Prefectural Yochi Dam (a Heisei-era dam, completed in 2004) A multipurpose dam built on the Yochi River in Sakuho Town, Minamisaku District, Nagano Prefecture. It is a 42 m high gravity concrete dam operated by Nagano Prefecture, serving flood control, unspecified water use, and securing water for municipal water supply. Downstream, the Yochi River and several other rivers join together and flow into the Chikuma River.
