The 60% polishing ratio, acidity of 1.7, 17% alcohol, and the text's dense, rich sweetness with fruity notes on the palate point to a full-bodied, aged-style sake. The top aroma is restrained, but the aroma opens up in the mouth, and the SMV of +3 keeps the finish clean.

About

In September 2022, Gangi Hiyaoroshi Junmai Muroka Genshu, a limited autumn release (launch timing: September), became available from Yaoshin Shuzo in Iwakuni. This is a sake available by mail order. Gangi's hiyaoroshi (sake aged over the winter and released in autumn) comes in two types, junmai and junmai ginjo. This one is the junmai hiyaoroshi. Because hiyaoroshi is aged until autumn before release, its degree of maturation varies slightly from year to year. On the palate it has plenty of body, but the finish is clean, so it does not feel heavy. A rich, deep sweetness and a firm, concentrated flavor come with fruity nuances. Sweetness and acidity spread vividly, creating a flavor profile with a clearly defined outline. It can be enjoyed across a wide temperature range, from chilled to room temperature and warmed (kan), making it very versatile. When warmed, it becomes even gentler and mellower. Please enjoy its character, which differs from that of Gangi's unpasteurized genshu (nama genshu).
