Milling to 58% with SMV +5 and acidity 1.6, plus the brewery's description of a dry, sharp finish and rice umami, points to restrained aroma, a full umami-led body and low sweetness. This places it in the jun (restrained and rich) group.

About

Izumibashi is a rare cultivation-and-brewing brewery (saibai jozogura) in Japan, guided by the conviction that “sake brewing begins with rice farming.” Located in Ebina, Kanagawa Prefecture, the brewery is involved in every stage, from growing sake rice to polishing and brewing. It carefully brews from rice that has received abundant blessings from the sun and the earth. It is a brewery whose entire output is junmai sake. Megumi Ao Label is one of the long-running products of Izumibashi Sake Brewery, developed under the concept of 100% locally grown Yamada Nishiki, Kyokai No. 901 yeast, and karaumakuchi (dry yet flavorful). Made with 100% Yamada Nishiki grown in-house, this dry junmai ginjo is fully fermented with no residual sugar. Fully fermented, it offers a crisp dryness along with the blessings of the rice and its umami. It is truly a sake that lives up to the words “We have made this seriously, starting from the rice.” In addition, to draw out pure umami, the brewery is thorough enough to use bag pressing (fukuro-shibori).
