About

In general, sake is adjusted by adding water to bring down its alcohol content. This process is called kasui chosei (water-addition adjustment). Genshu (undiluted sake) is sake that does not go through this water-addition step. Sake is normally stored after brewing without any water added, so sake still held in tanks is, by definition, genshu. Recently, more people have also been enjoying it as a cocktail base.
