About

This bamboo sake uses a distinctive technique to seal a honkaku Shochu, brewed with Kururi water from Kazusa, inside the bamboo between its nodes. The fresh aroma of the bamboo and its minerals dissolve gently into the spirit, giving it a subtly sweet and mellow flavor. The bamboo is green bamboo (aodake) cut fresh and used as it is. Compared with bamboo that has been charred (yakitake), the bamboo aroma is stronger. Over time, however, the green color from the chlorophyll gradually fades.
