Sake brewing has flourished in Aichi Prefecture since the Edo period, and many historic sake breweries remain today.

Aichi's sake breweries have a background of historically thriving sake production, and long-established breweries are still scattered across the prefecture today. Sake styles range from light to rich, and local sake designed to suit the regional food culture has developed over time.

Sake of Aichi

Located midway between Tokyo and Osaka, this region has a long history of sake making and a thriving brewing industry. Possibly influenced by the rich flavors of the local cuisine, many breweries excel at umakuchi-style sake (full-bodied and umami-rich). In recent years, the prefecture developed its own sake rice, Yume Sansui, an improved variety derived from Yamada Nishiki, which is used to brew Ginjo and Daiginjo sake.
