About

Its character refreshes the palate between dishes and brings out the flavor of the next, so it offers a more refined taste than the standard Atagonomatsu Honjozo. It remains enjoyable right up to the last cup. -Origins of Betsu Shikomi Honjozo- In the days of the former brewery, one honjozo fermentation tank consistently produced sake of exceptionally high quality. This was Tank No. 63 (Rokusan-go tank). Sake brewed in this tank was sold as "Betsu Shikomi" (separately brewed), which marked the beginning of this product. The name Rokusan-go (No. 63) is also printed on the label band. Today, Betsu Shikomi Honjozo is made by selecting high-quality sake from this separate brewing.
