About

The yeast used does not produce aroma, so that the character of the rice can be enjoyed. Low in amino acids, it has a clean flavor that is light and rhythmic as it evolves on the palate. It is the sharpest-tasting member of the Atagonomatsu series. -Gin no Iroha- "Gin no Iroha (Tohoku Sake No. 218)" is the second sake rice variety developed exclusively in Miyagi in about 20 years, following Kura no Hana, which debuted in 1997 (Heisei 9). Debut: 2019 (Reiwa 1) Parentage: mother Genkimaru, father Dewa no Sato Characteristics: Bred to suit Miyagi's climate, with good cold tolerance and high yield. Large grains with a high rate of chalky centers (shinpaku), particularly the eye-shaped type. Name origin: "Gin" refers to the careful selection and craft of ginjo brewing. "Iroha" means basics, and also evokes the gentle image of Princess Goroppachi (Iroha), eldest daughter of Date Masamune.
