About

Junmai sake carefully brewed using a traditional yamahai shubo (yeast starter). It draws out the full character of yamahai junmai. With finely balanced acidity and deep richness, this is a sharp, cleanly finishing extra-dry (cho-karakuchi) sake. In truth, no junmai sake is harder for the toji (master brewer) to craft than a dry one. A sake that is merely dry is easy to make, but it will not satisfy connoisseurs. Sake truly comes alive alongside food. This extra-dry sake keeps its flavor intact while finishing sharply clean. It reaches a sublime state of sake mastery that only yamahai junmai brewing could achieve.
