About

A junmai sake brewed using only traditional yamahai shubo (yeast starter). The extra labor involved allows the umami of the rice to come through fully. Typical of yamahai brewing, it is an authentic dry sake with a rich body and a clean, crisp finish. In the Showa 50s (1975-1984), it was released as a standalone product brewed by the yamahai method, a method that had not previously been brought into the spotlight. Since then, it has remained popular as a hearty, authentic dry sake.
