About

The finest Yamada Nishiki sake rice grown in the Special A district of Hyogo Prefecture is polished down to 35% over a full three days and nights, and all of it is used in this sake. The toji (master brewer) faced the moromi (fermentation mash) for more than a month, 24 hours a day, so as not to miss the slightest change. Kizakura's highest-quality Junmai Daiginjo, SUPER PREMIUM, was placed in sake bags and pressed slowly so as not to apply pressure. The umami of the rice is fully drawn out, and the aroma is finished with elegance.
