About

A lightly cloudy sake (usunigori) born in deep winter, when snow covers the land as far as the eye can see. It then rested quietly in the brewery, sensing the changing seasons from outside while patiently waiting for the arrival of autumn. Having gently matured over time, this lightly cloudy sake is released as "Shimofuri Roman" when frost settles on the ground. Koji rice: Gohyakumangoku Kake rice (added rice): Yume no Kaori Fourth-stage rice (yondan-mai): Hime no Mochi Slowly matured, with its umami and richness drawn out. Its mellow flavor pairs well with autumn cuisine.
