The 40% polished daiginjo gives a fragrant aroma, while the 17% genshu strength and low acidity of 1.1 add a smooth, fuller body. An SMV around +3 with soft acidity suggests a moderate, slightly sweet-leaning profile.

About

Brewed through a long, low-temperature fermentation in the deep winter cold, pressed by the fukuro-shibori (bag-pressing) method, stored in tobin (small tanks), and pasteurized by bottle-warming (binkan hiire). Afterward, it was kept in hyoon chozo (ice-temperature storage) using the brewery's own secret aging method, and finished with care as a premium daiginjo genshu (undiluted sake). Smooth on the palate, with a harmonious aroma and an elegant texture, it is a bottle you can count on.
